Healthy Coconut Candy

I love summer. Plain and simple. For me, winter is just miserable. I hate being cold, having to bundle up to just leave the house, and having goosebumps 24/7. The ONLY good thing about winter, is it brings Christmas. One of my favorite holidays for sure. But now that Christmas is long over, the cold can go. I have a dream to one day live down south. I wouldn’t mind hot summers, and pretty mild winters. I can’t say I would miss snow. Maybe on Christmas day it would be nice to have snow, but living here in PA, well we had a white Christmas this past year for the first time, what it seems like to me because I can’t remember the last white Christmas we had. I could give up snow for sure.
Since I’m in the mood for warmer temperatures, and trying to “believe” it’s warmer out. I’ve been feeling pretty tropical. Anytime I think of summer, automatically coconut comes to my mind. Honestly, I have no idea why. I have a love hate relationship with coconut. I like the flavor of coconut, but I will not touch shredded coconut. I think it’s a texture thing. It just really grosses me out. But the flavor and smell, I do like. And Caleb, is a true lover of ANYTHING coconut. He’s probably the reason why I have found myself liking it more. Have you heard of mounds and almond joy candy? Okay, most likely you have. Who hasn’t? Well, have you read the ingredients? The first ingredient is corn syrup! Yuck…and not to mention a few ingredients I can’t even begin to pronounce. I liked to buy Caleb a mounds candy bar as a little sweet treat. And sometimes almond joys..until he let me know he didn’t care for the almonds. But after reading those ingredients, I can’t bring myself to ever buy them for him again. I’m very cautious with my health, so why would I want him to eat crappy food? Well I don’t, at all!
Since there would be no more candy bars, I had to take matters into my own hands. I present to you my healthy version of Mounds:
