Bring On The Comfort Food

It has been one cold and windy day here. I know fully it’s suppose to be cold since it’s winter, but just yesterday it was in the 60s! So it seems even more cold now. I truly hate the cold. I could move down south and never have a winter, and be very content. Cold weather just makes me feel like staying inside, and wait for summer. Seriously. I realized I didn’t make a post yesterday. Whoops. I was just so tired all day. But I did make it to the gym, about two hours! Whoo hoo. Thanks to my best friend for making me work hard ;)
Today, I am sore. Not just like sore legs. My ENTIRE body is sore. Geesh, I am that out of shape…
Also today, I haven’t been feeling good. I don’t know why I just can’t seem to feel better. So feeling sick, being cold, and sore muscles calls for comfort food. Since going gluten free. I have missed having Panera’s chicken noodle soup in a bread bowl. My goodness that stuff was so amazing. I came across a gluten free chicken noodle soup recipe the other day, and it was so simple to make! I can’t believe I didn’t think of making it before. But unfortunately, I didn’t save the recipe, and I have no clue where I saw it. It happens. Thankfully I am pretty good at remembering recipes. It’s just a basic soup recipe. So I put in what I thought would be good. You really can’t go wrong with making chicken noodle soup.

This soup was delicious. And super easy to make! I think I may have Panera’s chicken noodle soup beat ;)
